Chicory shows it’s purple blue flowers in meadows around here and has many culinary and medical uses.

    I miss chicory! I lived all my life – well, since I was five – in the east and moved to the Pacific northwest a few years ago. Love it here, but I hardly ever see chicory, which I used to love seeing on highways mixed with Queen Anne’s Lace. It never came home well. And when I’ve tried it as a coffee substitute, well, ick. But such a special color, and such a sweet, humble plant.
